    The earthy flavors of roasted red beets paired with the tangy flavors of goat cheese and greek yogurt combine to make a delicious light and colorful whipped dip that’s perfect for snacking on with some chips!


    If you know me and have been following along with my recipe creations, then by now you know that I love love love goat cheese. 

    With summer fast approaching, I wanted to make a fun and colorful dip that’s not only super easy to make, but also fun to bring along to any summer party and tastes delicious! This dip is sure to be a crowd pleaser!

    What Ingredients are Needed for Whipped Goat Cheese & Beet Dip?

    Goat Cheese: We will need an 8 ounce log of goat cheese for this recipe.

    Beets: If you can buy pre-roasted beets in the refrigerated section of the grocery store- go for it! Love Beets is a brand I like to purchase. To clarify, not jarred beets. 

    Olive Oil: Quality olive oil really enhances this dip, opt for extra virgin.

    Lemon: The zest of one lemon.

    Greek Yogurt: Plain greek yogurt. I used non-fat but feel free to use full fat, it would probably make it even creamier!

    Salt

    Pepper

    Optional Garnishes: Parsley, Dill, Chopped Nuts

    How to Make Whipped Goat Cheese & Beet Dip

    Add the greek yogurt, lemon zest, goat cheese, and 1 tbsp of olive oil to a food processor and blend until smooth and creamy.

    Add the beets and remaining olive oil and blend again until super smooth and creamy and all ingredients are fully combined.

    Transfer to a serving bowl and top with optional garnishes like chopped nuts and herbs.

    Ingredients:

    • 8oz, goat cheese
    • ½ cup, greek yogurt (113g)
    • 1 lemon, zested (3g)
    • 2 tbsp, olive oil (26g)
    • 5 -9 small beets, pre-cooked (225g)
    • Chopped pistachios or walnuts, optional garnish
    • Parsley or dill, optional garnish

    Directions:

    1. In a food processor/blender, add the goat cheese, greek yogurt, lemon zest, and 1 tbsp of olive oil. Blend on high until combined.
    2. Add the pre-cooked beets and remaining olive oil and blend until combined and a smooth consistency is formed.
    3. Transfer dip to a serving bowl and drizzle with optional additional olive oil and top with optional garnishes like chopped pistachios, walnuts, and herbs. 
    4. Serve and enjoy immediately or let chill in the fridge until ready to serve.
    Notes:
    1. Dip will keep in the fridge for up to 4 days in an airtight container.
    2. If dip stiffens up in the fridge over time, when ready to serve, fluff it with a spoon and drizzle with a bit of olive oil to lighten it up again.
