Vegan Chocolate Fudge Banana Bread

    A vegan banana bread recipe fully loaded with cacao powder, chocolate chips, and a fudgy chocolate ganache.

    What Ingredients are Needed for Vegan Chocolate Fudge Banana Bread?

    GoNanas Original Banana Bread Mix: A vegan and gluten-free banana bread mix that is super delicious on its own and super convenient for when you want banana bread without the hassle of measuring out ingredients.

    Bananas: Two super ripe medium-sized bananas (aka very brown and mushy) or three ripe medium-sized bananas.

    Coconut Oil: We will need 2 melted tablespoons for our banana bread mix.

    Maple Syrup: Can swap for honey or agave syrup.

    Cacao Powder: An organic cacao powder is a great superfood addition to this recipe. You can swap for an unsweetened cocoa powder

    Coconut Milk: We’ll need coconut milk for the chocolate ganache, so feel free to use coconut milk in the banana bread batter as well or any other dairy-free milk like almond or oat.

    Chocolate Chips: A dairy-free option like EnjoyLife mini semi-sweet chocolate chips.

    How to Make Vegan Chocolate Fudge Banana Bread

    Prep the Banana Bread: Preheat the oven to 350° F and grease an 8x4 loaf pan. In a large bowl, whisk together the bananas, maple syrup, 3 tbsp coconut milk, and coconut oil. Stir in the GoNanas mix and cacao powder until just combined. Fold in ¼ cup of the chocolate chips and pour into the prepared loaf pan.

    Bake the Banana Bread: Bake in the oven for 50 minutes. Remove banana bread from the oven and insert a toothpick through the center to make sure it’s fully baked. If the toothpick comes out clean, your banana bread is ready!

    Make the Chocolate Ganache: Spoon the thick coconut cream from the coconut milk can into a microwaveable bowl. Heat for about 1 minute, watching to make sure it doesn’t bubble over. Pour hot coconut milk over ½ cup of chocolate chips and let it sit for 2-3 minutes without stirring. After 2-3 minutes, whisk the chocolate chips and coconut milk together until smooth. Let cool completely to allow it to thicken up to become the frosting for our banana bread.

    Final Touches: Let banana bread cool before removing from the pan. Frost the cooled banana bread with the chocolate ganache and top with remaining ¼ cup of chocolate chips.

    7. Pour hot coconut milk over ½ cup of chocolate chips and let it sit for 2-3 minutes without stirring. 
    8. After 2-3 minutes, whisk the chocolate chips and coconut milk together until smooth. Let cool completely to allow it to thicken up to become the frosting for our banana bread.
    9. Remove banana bread from the oven and insert a toothpick through the center to make sure it’s fully baked. If the toothpick comes out clean, your banana bread is ready!
    10. Let banana bread cool before removing from the pan.
    11. Frost the cooled banana bread with the chocolate ganache and top with remaining ¼ cup of chocolate chips!
    Notes:
    1. Store leftovers in an airtight container at room temperature for up to 3 days.
