    Gimme gimme, gimme gimme s’moreeeee. In the words of Britney Spears, gimme s’more of those triple chocolate s’more cookies! These cookies are a heavenly combination of chocolate, graham crackers, and marshmallows that are pillowy, chewy, and oh so delicious!


    These cookies…are everything. If you love s’mores but just don’t have access to a firepit, these cookies are for you. S’mores season is so short, I wish summer bonfires could happen all year long so we can always enjoy the melty chocolate, burnt marshmallow, and graham cracker combination. Enter these triple chocolate s’more cookies that can satisfy all those s’mores cravings!

    What are S’mores Cookies?

    These triple chocolate s’mores cookies are everything you ever wanted in a cookie. Soft and chewy, loaded with two types of cocoa powder and mini chocolate chips for a trifecta of chocolate paired with mini marshmallows and a crumbling of graham crackers. Mmmm they’re perfection. 

    Basically they’re your new favorite cookie, you’ve been warned!

    How Do You Keep the Marshmallows from Melting in the Cookies? 

    The key to keeping the marshmallows from completely disappearing when baking is to make sure you’re using slightly softened room temperature butter. This will prevent the cookies from spreading out while baking, ultimately helping the marshmallows still have their ooey gooey melty texture once baking is complete. You’ll also want to make sure the marshmallows are mostly in the center of each rolled up cookie dough ball, tuck ‘em in there real nice before baking!

    Ingredients Needed for these Triple Chocolate S’more Cookies

    Cocoa Powders & Chocolate: Three, yes I said THREE, types of chocolate are used in this recipe. A dark black cocoa powder, unsweetened cocoa powder, and mini chocolate chips. The more chocolate the better, right? As a sneaky little bonus, the addition of dark black cocoa powder makes these cookies kinda taste like oreos too! You can get a massive jar of black cocoa powder on Amazon that will last you forever! For mini chocolate chips, I used Enjoy Life semi-sweet morsels.

    Wet Ingredients: Light brown sugar, white granulated sugar, 2 eggs, and vanilla make up the wet ingredients of this decadent cookie recipe.

    Dry Ingredients: All purpose flour, baking powder, baking soda, and salt.

    The Mix Ins: Mini marshmallows and 2 sheets of graham cracker crumbs crumbled up into pieces make these cookies truly s’mores flavored.

    Kitchen Tools Needed for this Recipe

    • Baking sheet with parchment paper
    • Stand mixer or electric hand mixer
    • Mixing bowls and spoons
    • Spatula 
    • Cookie scoop or spoon
    • Cooling rack

    How to Make Triple Chocolate S’more Cookies

    Prep the oven: Preheat the convection oven to 350° F and line the baking sheet with parchment paper. If you don’t have a convection oven, no problem just use your regular oven settings. The convection helps the marshmallows not completely disintegrate while baking.

    Prepare the cookie dough: In a stand mixer with paddle attachment or large bowl and electric hand mixer, beat butter, sugar, eggs, and vanilla until light and fluffy. In a small bowl, combine the flour, cocoa powders, baking powder, baking soda, and sea salt. Mix with a spoon to combine. Add the dry mixture to the wet mixture until fully combined. With a spatula, stir in the graham cracker crumbs, marshmallows, and mini chocolate chips. 

    Bake the cookies: With a spoon or cookie scoop, roll a heaping 2 tbsp of cookie dough into a ball and space 2 inches apart on the baking sheet. Press down lightly on each dough ball. Bake for 8-10 minutes. Remove from the oven and let cool on the tray for ~10-15 minutes before transferring to a cooling rack. The cookies will be very soft and need to continue to bake on the tray.

    Ingredients:

    • ½ cup, unsalted butter, room temperature
    • ¼ cup, granulated white sugar
    • ¼ cup, light brown sugar, packed
    • 2 eggs
    • 1 tsp, vanilla extract
    • 1 cup, all-purpose flour
    • ¼ cup, black cocoa powder
    • ¼ cup, unsweetened cocoa powder
    • ½ tsp, baking powder
    • ½ tsp, baking soda
    • ¼ tsp, salt
    • ½ cup, mini marshmallows
    • ½ cup, semi-sweet mini chocolate chips
    • 2 graham cracker sheets, crushed

    Directions:

    1. Preheat the convection oven to 350° F and line the baking sheet with parchment paper.
    2. In a stand mixer with paddle attachment or large bowl and electric hand mixer, beat the butter, sugars, eggs, and vanilla until light and fluffy.
    3. In a small bowl, combine the flour, cocoa powders, baking powder, baking soda, and sea salt. Mix with a spoon to combine. 
    4. Add the dry mixture to the wet mixture until fully combined.
    5. With a spatula, stir in the graham cracker crumbs, marshmallows, and mini chocolate chips. 
    6. With a spoon or cookie scoop, roll a heaping 2 tbsp of cookie dough into a ball and space 2 inches apart on the baking sheet. Press down lightly on each dough ball
    7. Bake for 8-10 minutes.
    8. Remove from the oven and let cool on the tray for ~10-15 minutes before transferring to a cooling rack. The cookies will be very soft and need to continue to bake on the tray. 
    Notes:
    1. Store leftover cookies in an airtight container at room temperature for up to 4-5 days.
    2. If you don’t have a convection oven, regular will do. The convection is just a small step that helps the marshmallows not completely melt when baking.
