Summertime means fresh berries! This salad is packed with fresh strawberries, blueberries, and blackberries for the ultimate berry trio!
I love fruit and I love salads, but until recently I never really combined the two things together…I’m not sure why, but I can tell you one thing I'm sure of…I have been missing out on this awesome fruity salad combo for way too long!
Berries in salad are a game changer! It’s such a refreshing combo in the summer. Toss in a little goat cheese and some chopped pecans and you are good to go!
I love this recipe because it’s so simple to make, so beautiful to look at, and so freaking tasty!
What Ingredients are Needed for Summer Spinach and Berries Salad?
Baby Spinach: Fresh spinach leaves. I like to chop them up a bit, something about eating the entire leaf at once doesn’t do it for me…but feel free to leave them whole.
Strawberries: Fresh strawberries, stems removed and chopped into quarters.
Blueberries: Fresh blueberries, don’t forget to wash them!
Blackberries: Fresh blackberries. We’re keeping these whole, no chopping required.
Olive Oil: For our homemade dressing.
Pecans: Roughly chopped.
Goat Cheese: The tanginess of the goat cheese really compliments the sweetness of the berries.
Lemon Juice: For our homemade dressing.
Salt and Pepper: To taste, added to our homemade dressing.

How to Make Summer Spinach and Berries Salad
Chop: Roughly chop the spinach and pecans and slice the strawberries into quarters (smaller if the strawberries are large).
Combine: Add the chopped spinach to a large salad serving bowl. Layer in the sliced strawberries, blueberries, blackberries, chopped pecans, and goat cheese. Crumble the goat cheese as much as you can.
Mix: In a small bowl, whisk together with a fork the lemon juice, olive oil, and a dash of salt and pepper. Pour dressing over the salad and toss together until well coated.
Serve: Serve immediately and enjoy! If not serving immediately, wait to dress the salad until ready to serve.
