A warming spiced and spiked apple cider beverage perfect for warming you up in the cold weather!
Wassail originated in England. It’s simply a hot beverage consisting of apple cider, orange juice, and spices. In older times, the act of wassailing was to take a warm beverage and go sing to the health of the trees. These days we take warm beverages with us everywhere. Some of my favorite occasions to drink this spiked hot apple cider are below!
Best Places to Drink Wassail:
- Thanksgiving dinner
- Outside tailgates
- On your front porch/back deck with some blankets
- Next to a bonfire
- Put it in a to-go up and drink while your kids trick-or-treat!
What Ingredients are Needed for Spiked Hot Apple Cider (Wassail)?
Apple Cider: One gallon of apple cider.
Orange Juice: A few cups of no pulp orange juice.
Whiskey: I used Jack Daniels, however you can use whichever whiskey you prefer. You can also swap for bourbon, brandy, or rum.
Orange: One whole orange sliced into rounds. Used to flavor the drink and as an optional garnish!
Apple: One apple sliced up.
Ginger: One 2-inch piece of ginger, peeled.
Cinnamon Sticks: About 3 cinnamon sticks, used to flavor the drink and as an optional garnish!
Earl Grey Tea Bags: The tea bags are a part of what gives this wassail its warming flavor. Pro tip: tie the tea bags loosely to the handle of your pot so you don’t have to search around for them later!
Mulling Spices: Two packets of mulling spices (they will look like a tea bag). For me, these packets are easiest to use since you don’t have to go fishing around for whole peppercorns and cloves before you serve. Mulling spice is typically a combination of cinnamon, cloves, cardamom, star anise, peppercorns, and allspice.
Star Anise: About 3-4 whole star anises. Mostly because they look pretty! The spice will be captured in the mulling spice packet.

How to Make Spiked Hot Apple Cider (Wassail)
Prep the Ingredients: Peel the ginger piece. Slice the apple and oranges.
Assemble the Wassail: Pour the apple cider and orange juice into a large pot over high heat. Loosely tie the tea bags and mulling spice packets to the handle of the pot and drape into the liquids. Submerge the apple and orange slices into the liquids. Top with star anise, ginger, and cinnamon sticks.
Heat the Wassail: Let the wassail come to a boil and then turn down the heat to low and let simmer for at least 30 minutes. The longer you let the wassail simmer the better it gets! I recommend at least 30 minutes however our family usually starts making this in the morning to enjoy later on for Thanksgiving dinner. Plus, the aromas are just to die for so you really can’t go wrong by letting this simmer for hours.
Serve the Wassail: If you’d like to spike your wassail with alcohol, I recommend whiskey, bourbon, brandy or rum. In this recipe, I use Jack Daniel's Tennessee Whiskey. Pour one shot of whiskey into a mug then pour the warmed wassail over the whiskey. Stir lightly and top with desired garnishes.
