Sizzling and insanely flavorful chicken and vegetables layered with refried beans and cheese for the best fajitas you’ll ever have.
Who else remembers the sizzling fajitas at Chili’s? It was always such a thrill when someone ordered the sizzling fajitas and you could hear them coming from the kitchen. Well, now you can have sizzling fajitas from the comfort of your own home!
So what makes the fajitas sizzle? The cast iron skillet is the key to the sizzle. Make sure to get the pan nice and hot before cooking the chicken and veggies to ensure you get that desired sizzle.
The cast iron skillet will also help achieve the signature fajita char we all know and love.
Let’s recreate this Chili’s classic recipe!
What Ingredients are Needed for Sizzling Chicken Fajitas?
Chicken: Boneless, skinless chicken breast or chicken tenders sliced into thin strips.
Peppers: I used orange bell peppers but red or green also work great. Be sure to slice them into thin strips.
Onion: I prefer a sweet yellow onion sliced into thin strips for this recipe.
Refried Beans: I used organic refried pinto beans from Thrive Market. Fat free, reduced sodium.
Cheese: A fresh block of sharp cheddar cheese, shredded works great for this recipe. To keep things simple, you can use a pre-shredded Mexican blend cheese as well.
Spices: Chili powder, garlic powder, cumin, coriander, and cayenne pepper powder make up our fajita seasoning.
Balsamic Vinegar: For the chicken marinade.
Olive Oil: For the chicken marinade and to saute the veggies and chicken in.
Lime Juice: For the chicken marinade.
Tortillas: Flour tortillas are a staple for fajitas. I use small 6-inch tortillas for this recipe.

How to Make Sizzling Chicken Fajitas
Marinate the Chicken: At least one hour before cooking, marinate the sliced chicken breast in the balsamic vinegar, olive oil, lime juice, cumin, coriander, garlic powder, chili powder, and cayenne pepper*. Place in a sealed tupperware container in the fridge to marinate.
Get Sizzlin’: Heat a large cast iron skillet with olive oil over medium-high heat. Cook the chicken for 5-7 minutes, turn the slices and cook for another 5-7 minutes. Remove chicken from the skillet and set aside. Add more olive oil to the skillet and cook the peppers and onions until vegetables tender, approximately 5-7 minutes.
Warm the Beans: Meanwhile, in a small saucepan, warm the refried beans on medium-low heat.
Warm the Tortillas: Place tortillas on a microwave-safe plate and drape a damp paper towel over them. Heat the microwave for 30 seconds.
Assemble the Fajitas: Place tortillas on a flat surface and layer with a heaping spoonful of refried beans, the veggie and chicken mixture, and top with shredded cheese. Top with optional toppings such as: salsa, cilantro, sour cream/greek yogurt, avocado, or jalapenos.
