Growing up, summer and coleslaw were practically synonymous with each other in my house. Not only because this is a delicious and vibrant dish, but because it’s the perfect dish to make in the hot summer heat. No one likes turning the oven on in the heat of the summer, that’s why we take to the outdoors and grill up our favorite burgers and hotdogs, right?
When you’re in need of the perfect BBQ side dish, look no further than this red cabbage coleslaw! Making this coleslaw only requires a bit of prep work and then you just stick it in the fridge to let it chill and the flavors absorb.
Make this dish ahead of time and forget about it until you’re ready to eat! The longer it stays in the fridge the better it tastes.

What Ingredients are Needed for Red Cabbage Coleslaw?
Red Cabbage: It’s not coleslaw without cabbage! Red cabbage is not only brighter in color than its green counterpart, but I find it holds its crunch better too - no soggy coleslaw allowed in this recipe!
Carrots: Two large carrots peeled and shredded up. Can opt for pre-shredded carrots if you want to save some prep work, just follow the gram measurements in the recipe card below.
Bell Peppers: Red and yellow bell peppers for even more crunch and color.
Red Onion: Dice up ½ a small red onion very small. We don’t want the onion to overpower the other ingredients by being too big.
Homemade Dressing: Blend together the following ingredients for a healthy and delicious homemade dressing: cilantro, serrano chili peppers, greek yogurt, red wine vinegar, honey, olive oil, scallions, and salt/pepper.

How to Make Red Cabbage Coleslaw
In a large bowl, add all your chopped and shredded veggies for the cole slaw. Set aside.
In a blender, add all ingredients for the dressing and blend until creamy.
Pour dressing over the coleslaw veggies and fold with a spatula until well combined.
Refrigerate for at least 1 hour before serving so flavors can marinate together.
