    This Mexican Quinoa Salad is the perfect make-ahead meal prep dish. Enjoy it as a lunch, side dish, or bring along with you to a picnic gathering. Made with wholesome and Mexican-inspired ingredients.


    This Mexican Quinoa Salad is perfect for meal prepping for your lunches for the week, as a side dish to accompany your main entree at dinner, or to take along with you to a BBQ or picnic in the park! 

    It’s easy to make, easy to transport, and easily one of my favorite dishes to make!

    What Ingredients are Needed for Mexican Quinoa Salad?

    Quinoa: White quinoa or even a blended mix of red and white is great for this salad. White quinoa tends to be a bit fluffier than red, which is a bit denser. The combo of the two together really balance each other out.

    Black Beans: One can of beans drained and rinsed well. Can swap for pinto or chili beans.

    Corn: You can use canned corn or frozen. I always have frozen corn on hand so that’s what I’m using. Just make sure to thaw or drain accordingly.

    Tomatoes: Juicy red tomatoes add a nice pop of color to this dish. If you don’t have tomatoes on hand, a few spoonfuls of your favorite salsa will do the trick.

    Cilantro: Freshly chopped cilantro, feel free to omit or replace with another herb like parsley.

    Cotija Cheese: Mexican cow’s milk cheese, crumbled up and mixed into the salad.

    Olive Oil: For the dressing.

    Lime Juice: For the dressing.

    Spices: Chili powder, salt, and pepper mixed into the dressing for a little subtle kick.

    How to Make Mexican Quinoa Salad

    Step One: In a medium saucepan, boil 2 cups of water and cook quinoa according to package instructions. Once cooked, drain any excess water and place in the fridge to cool for at least 30 minutes. 

    Step Two: While quinoa is cooking/chilling, chop your veggies/herbs. In a large bowl, combine the chilled quinoa, black beans, corn, tomatoes, cotija cheese, cilantro, and scallions. Stir to combine.

    Step Three: In a small bowl, whisk together the lime juice, olive oil, chili powder, salt and pepper. Pour dressing over the quinoa salad. Stir to combine and enjoy!

    Ingredients:

    • 3 cups quinoa, cooked (180g dry)
    • 1 can, black beans, drained and rinsed (420g)
    • 1 cup, frozen corn, thawed (120g)
    • 2 medium tomatoes, chopped (235g)
    • ½ cup, cotija cheese, crumbled (112g)
    • ⅓ cup, cilantro, roughly chopped (10g)
    • ⅓ cup, scallions, chopped (10g)
    • 1 lime, juiced
    • 2 tbsp, olive oil (30ml)
    • 1 tbsp, chili powder (5g)
    • Dash of salt and pepper, to taste

    Directions:

    1. In a medium saucepan, boil 2 cups of water and cook quinoa according to package instructions. Once cooked, drain any excess water and place in the fridge to cool for at least 30 minutes.
    2. While quinoa is cooking/chilling, chop your veggies/herbs.
    3. In a large bowl, combine the chilled quinoa, black beans, corn, tomatoes, cotija cheese, cilantro, and scallions. Stir to combine.
    4. In a small bowl, whisk together the lime juice, olive oil, chili powder, salt and pepper.
    5. Pour dressing over the quinoa salad. Stir to combine.
    6. Serve and enjoy!
    Notes:
    1. Store leftovers in an airtight container in the fridge for up to 4 days.
