    What to spread cream cheese on?

    Here are a few of my favorites:

    • Everything, plain, or poppy seed bagels. Veggie cream cheese is best when paired with a savory bagel, IMO. But you do you and spread this delicious cream cheese on any bagel you like!
    • I love toasting up a slice of pumpernickel or sourdough bread and topping it with some veggie cream cheese, sliced tomato, and avocado! 
    • Toast up some English muffins and slather this cream cheese on top - so good!
    • I also love making cream cheese cracker sandwiches. Just take two of your favorite plain cracker and sandwich a small spoonful of cream cheese in between and viola you have the perfect little afternoon snack
    • Serve alongside a veggie platter of carrot matchsticks, red pepper slices, and celery!

    Can you make this vegan?

    Absolutely! Just swap for a vegan cream cheese alternative.

    What Ingredients are Needed for Homemade Veggie Cream Cheese?

    Cream Cheese: A block of regular or light cream cheese.

    Roasted Red Pepper: I bought premade roasted red peppers from a jar, usually found in the condiment aisle. You can make your own by roasting peppers in the oven - you’ll only need one!

    Carrot: Just half a large carrot or one small carrot, peeled and chopped up roughly.

    Scallions: One scallion for some added flavor.

    How to Make Homemade Veggie Cream Cheese

    You can have homemade veggie cream cheese in a matter of minutes with this super simple recipe.

    In a food processor, add the red peppers, carrot, and scallion. Blend until finely minced.

    In a small bowl, add the block of cream cheese and the blended veggies.

    Stir with a spatula until fully combined.

    Store in an airtight container in the fridge for a few hours to let the cream cheese stiffen up a bit again. 

    Enjoy with your favorite bagel, crackers, crudite or toast!

    • ½ of one roasted red pepper
    • ½ large carrot, peeled and roughly chopped
    • 1 scallion, stem removed and roughly chopped
    • 8 oz, cream cheese

    Directions:

    1. In a food processor, add the red peppers, carrot, and scallion. Blend until finely minced.
    2. In a small bowl, add the block of cream cheese and the blended veggies.
    3. Stir with a spatula until fully combined.
    4. Store in an airtight container in the fridge until ready to enjoy!
