Greek yogurt, lemon juice, dill, and parsley forms the most delicious potato salad dressing that is not only healthy but creamy and oh so tasty!
Any other mayonnaise haters out there? If you dislike mayo as much as me, this potato salad recipe will be your new go-to! Greek yogurt replaces icky mayo for a deliciously healthy potato salad recipe.
This recipe is a spin-off from my grandma's classic potato salad recipe. Fresh dill weed is the star ingredient so I kept that. I really only swapped the mayo for greek yogurt and vinegar for lemon juice!

What Ingredients Needed for Herbed Yogurt Potato Salad?
Potatoes: Teeny tiny gold potatoes or small red potatoes.
Greek Yogurt: Plain non-fat greek yogurt substitutes the mayonnaise you would find in a standard potato salad recipe. I highly prefer greek yogurt to mayonnaise and will always swap it when a recipe calls for mayo!
Lemon Juice: Fresh or from a bottle but make sure it’s 100% juice, no added sugars or concentrates.
Celery & Onion: Chopped up small and mixed in with the potatoes.
Dill & Parsley: Fresh dill weed and parsley will be mixed in with the yogurt to achieve our herbed yogurt flavor!

Step One: Wash and boil the potatoes. Let cool and slice into bite-sized pieces.
Step Two: Chop the celery and onion up small and add to a large bowl with the potatoes.
Step Three:In a smaller bowl, whisk together greek yogurt, lemon juice, dill weed, parsley, salt, and pepper.
Step Four: Add the greek yogurt mixture to the potatoes, celery, and onion. Toss to coat.
Step Five: Let chill in the fridge until ready to serve!
