This goat cheese, pistachio, and fig glaze toastie may seem fancy, but it’s actually super easy to make! With only four ingredients and five minutes you can whip up this delectable toast for lunch or as a party appetizer!
If you have noticed yet, I am obsessed with goat cheese. I’ve said it before and I’ll say it again, it is the GOAT (greatest of all time) of cheeses. Tossed in my Winter Harvest Salad or mixed into my Pasta and Peas with Goat Cheese Sauce, I am a die-hard goat cheese lover. So naturally I had to create a fancy goat cheese toast recipe, however I use the term fancy pretty lightly here as this recipe has only four ingredients.
You can make this toastie for lunch or slice the sourdough into smaller pieces and serve as a party appetizer! Either way, it’s sure to be a hit.
Ingredients in this Goat Cheese, Pistachio & Fig Toastie
Sourdough Bread: I love using sourdough when I want a nice crispy piece of toast. Any artisan bread would be good to use here, as long as it’ll get a nice crisp crunch to it when toasted. Goat Cheese: Only the best cheese ever. Goat cheese is super flavorful and spreads very nicely on the warm piece of toast. There’s nothing better than some warmed up goat cheese, so creamy and melty!
Pistachios: A little extra crunch, flavor, and color for this toast. You could use another nut or seed like pepitas if you don’t have pistachios on hand. Just make sure to chop whatever nut/seed you choose into smaller pieces.
Fig Glaze: Fig and goat cheese is the ultimate combo. In this recipe, we’re using a fig glaze that is drizzled on as the final touch. Don’t have fig glaze? A balsamic glaze would be a comparable swap and just as delicious.

How to Make the Goat Cheese, Pistachio & Fig Toastie
Step One: Toast two slices of sourdough bread in a toaster or toaster oven until nice and crunchy.
Step Two: Spread two ounces of goat cheese evenly onto each slice of toasted bread. The warm bread will help the cheese spread nicely.
Step Three: Sprinkle ¼ cup of chopped pistachios evenly across both slices of bread.
Step Four: Drizzle about 1 tablespoon of fig glaze onto each slice of bread or more if desired!
Step Five: Serve immediately and enjoy!
