What is a Skillet Pizza? Besides a wood-fired pizza, this method of cooking pizza is probably the crispiest. I don’t know about you, but I definitely don’t have access to a wood-burning stove to make pizzas with. Apartment living doesn’t quite allow that… So a skillet pizza is 100% the next best thing. Skillet pizzas use a cast-iron skillet or heavy-duty oven-safe frying pan to achieve that crispy crust satisfaction.
Are Skillet Pizzas Hard to Make? No way! This recipe is all about simplicity. We’re utilizing store-bought dough and only a handful of toppings that require little prep work. Plus, this pizza only takes 10 minutes to bake, making it way more satisfactory than waiting for that pizza delivery!

Ingredients in this Skillet Pizza
Pizza Dough: In the name of keeping it simple, we’re using store-bought pizza dough. Grab a fresh dough from the refrigerated section of the store or you can always stop by your local pizzeria and ask for some dough - it’s not usually on the menu but they will typically sell it to you, and you know that’s the really good stuff!
Cornmeal: I love a crispy and slightly gritty pizza crust, adding a touch of cornmeal to the bottom of the pizza crust not only helps it from sticking to the pan but also adds an extra cripiness! You can skip this if you don’t have any on-hand as it’s not a crucial element to the recipe, but I highly recommend it for texture purposes.
Goat Cheese: Goat cheese is the GOAT of all cheeses, in my opinion. It pairs so well with the fig and balsamic, trust me on this one.
Figs: This recipe uses a combination of dried figs, which we bring back to life-ish and some fig jam. We’re getting extra figgy because the more fig the merrier!
Arugula: Top the pizza off with arugula when it comes out of the oven so it doesn’t wilt. Not only does arugula add some color and nutrients to this pizza, but also a nice peppery flavor.
Balsamic Drizzle: Get yourself some balsamic glaze drizzle, you will not regret it. I find myself drizzling it on my pizzas, bread, salads, you name it! Adding just a touch of this right after removing from the oven really adds a lot to this pizza since it is sauce-less.

How to Make this Skillet Pizza
Step One: Preheat the oven with the cast iron skillet inside to 500° F.
Step Two: Sprinkle approx. ⅛ cup of cornmeal onto a flat surface and stretch dough out into a circular shape using your hands.
Step Three: When the oven is fully preheated, remove the skillet from the oven and carefully spread the dough into the pan.
Step Four: Bake the pizza dough in the oven for 5 minutes.
Step Five: Remove dough from the oven and flip over and top with 2.5 ounces of goat cheese, 5 dried figs sliced lengthwise, and 3 tablespoons of fig jam. Bake for another 5 minutes until the cheese is warmed and melty.
Step Six: Remove pizza from the oven and top with arugula and then the balsamic drizzle. Let cool for a few minutes before transferring the pizza to a cutting board.
Step Seven: With a pizza cutter or large knife, cut into even slices. Serve and enjoy!
