Blondies but with creamy peanut butter, dark chocolate chips, crushed peanuts and NO refined sugar! A peanut butter lovers dream all while being completely gluten-free.
What is a Blondie?
A blondie is basically a brownie but without the melted chocolate and cocoa powder. Blondies and brownies have similar texture, consistency, and shape but the flavors differ.
No Refined Sugar? How?
That’s right! This recipe is full of good-for-you swaps that make these blondies gluten-free and refined sugar-free. Coconut sugar is swapped for brown sugar. Coconut sugar is not a refined sugar, so it contains more nutrients and minerals than a traditional granulated white or brown sugar.
We’re also swapping in refined sugar-free chocolate chips. Lily’s brand of dark chocolate chips offers a refined sugar-free option, they use stevia to sweeten their chips!
And lastly we’re sweetening our blondies naturally with some mashed bananas!

What Ingredients are Needed for Gluten Free Peanut Butter Blondies?
Peanut Butter: Creamy, unsalted and natural peanut butter.
Gluten-Free Flour Blend: I used Premium Gold All Purpose Gluten Free Flour Blend that is a 1:1 swap for regular all purpose flour. I got mine on Amazon and there are a ton of other gluten free flour blend options available.
Coconut Sugar: A refined-sugar free substitute for white or brown sugar. Typical blondie recipes call for brown sugar so if you don’t have coconut sugar you can replace it with dark or light brown sugar.
Bananas: A natural substitute for sugar.
Peanuts: Unsalted, roasted and crushed up roughly for some added crunch.
Dark Chocolate Chips: To make these blondies completely refined-sugar free, make sure to use baking chips like Lily’s.

How to Make Gluten Free Peanut Butter Blondies
Prep: Preheat the oven to 350° F and spray an 8x8 baking pan with cooking oil.
Combine the Wet Ingredients: In a large bowl, combine the peanut butter, coconut sugar, and mashed banana. Whisk in the eggs and vanilla until fully combined.
Combine the Dry Ingredients: In a medium bowl, add the GF flour blend, baking powder, and salt. Stir to combine.
Make the Blondie Batter: Gradually add the dry ingredients to the wet ingredients until dough-like consistency forms. Fold in the chocolate chips and peanuts.
Bake the Blondies: Add blondie batter to the baking pan, spreading into an even layer. Press in any additional chocolate chips or peanuts on to the top (optional). Bake for 20 minutes.
Enjoy the Blondies: Remove from the oven and let cool before removing from the pan. Cut into equal-sized squares and enjoy!
