Giant Chocolate Chunk Skillet Cookie

    Who’s ready to indulge in this giant chocolate chunk skillet cookie? This cookie is giant for a few reasons: 1. It’s loaded with huge chocolate chunks and 2. It’s made in a big ole 12-inch cast iron skillet! Double the chocolate and double the size equals quadruple the fun, right?


    We’re going gluten-free and refined sugar free for this recipe! It’s big AND it’s made with wholesome ingredients? That’s a win in my book. One easy swap and you can make this recipe dairy-free as well! Not into the gluten-free flours? Swap it for AP flour and you’re good to go!

    This giant skillet cookie is great for big families, gatherings with friends, or even for one or two people who want to have skillet cookie leftovers for the week! If making this for your friends and family, it’s definitely a crowd pleaser! I make this when I have friends coming over and we either all dig in with a spoon or cut into slices and enjoy with our favorite ice cream! It seems like every cookie skillet recipe is topped with vanilla ice cream, but this recipe is good with any ice cream flavor. Where are all my chocolate ice cream lovers at?!

    Why make this skillet cookie recipe? It’s soft, chewy, and ooey-gooey delicious. It’s great for any celebration or gathering and is always a big hit. Added bonus: you can use this cookie dough for regular-sized cookies if the big skillet isn’t your thing.

    Don’t have a 12-inch skillet? Don’t worry, I’ve got you. If you have an 8 or 9-inch skillet, cut the recipe in half and bake. If you have an even smaller skillet, cut the recipe in half again and add to your small skillet, watch the baking time as the smaller dough will be done quicker.

    Ingredients in this Giant Chocolate Chunk Skillet Cookie

    Dry Ingredients: A combination of coconut and oat flours, salt, and baking soda.

    Wet Ingredients: Coconut oil, coconut sugar, maple syrup, eggs, and vanilla extract.

    Chocolate Chunks: I cut up a Hershey’s chocolate bar, but you can use any type of chocolate chunks or chips here.

    Kitchen Tools Needed for this Recipe

    How to Make the Giant Chocolate Chunk Skillet Cookie 

    Step One: Preheat the oven to 350° F and spray your skillet with cooking oil. 

    Step Two: In a medium mixing bowl, combine your dry ingredients: flours, baking soda, and salt.

    Step Three: In a large mixing bowl, combine the coconut oil, coconut sugar, and maple syrup. Whisk until fully combined and fluffy.

    Step Four: Add the eggs, one at a time, until fully whisked together. Then add the vanilla and whisk until just combined.

    Step Five: Slowly incorporate your dry ingredients into your wet ingredients. Do this in sections, fold in part of the dry into the wet until fully combined and then repeat until all dry ingredients are fully combined in your dough. Stir in the chocolate chunks.

    Step Six: Pour the dough into the greased skillet, top with a few extra chocolate chunks, and bake in the oven for 25 minutes. 

    Step Seven: Remove cookie from the oven and top with salt flakes. Top with your favorite ice cream and eat it straight from the pan OR let the cookie cool before cutting into pieces and serving.

    1. Preheat the oven to 350°F and spray a 12-inch cast iron skillet with oil.
    2. In a medium mixing bowl, whisk together the flours, baking soda, and salt. 
    3. In a large bowl, whisk together the coconut oil, sugar, and maple syrup. 
    4. Add eggs, one at a time, whisk in, then add the vanilla extract and whisk until combined. 
    5. Add the dry into the wet and mix just until the dough comes together then stir in the chocolate chunks until just combined. 
    6. Add the dough into the skillet and top with a few more chocolate chunks. Bake for 25 minutes. 
    7. Remove cookie from the oven and top with optional salt flakes.
    8. Top with your favorite ice cream and eat it straight from the pan OR let the cookie cool before cutting into pieces and serving.
    Notes:
    1. Can sub coconut and oat flours for all purpose
    2. Can sub coconut sugar for brown sugar 
    3. You can easily make this dairy free by subbing in dairy free chocolate chunks from Enjoy Life
