    “Make you banana pancakes and pretend like it’s the weekend now.” If Jack Johnson ever tries these pancakes, I guarantee he’s going to love them! Gluten-free oatmeal and banana pancakes that are blended together for the perfect brunch-style breakfast any day of the week.


    What’s better than pancakes that can be made using just one piece of equipment? Sure boxed pancake mix can be made using one bowl… But these easy oatmeal banana pancakes only require one blender! And IMO the ingredients are wayyyyyy better than any boxed mix. I mean…they have bananas in them! Boxed mixes can’t do that!

    Preheat that skillet! Who else has experienced the first pancake on the batch dud? You turn on the stove burner, add the oil, and then add the batter immediately? I’m definitely guilty of this sometimes… No one wants a pancake dud. So turn on the burner while you’re blending the ingredients together and let the oil get hot before you add in the batter. Trust me it will make all the difference!

    Ingredients Needed for these Easy Oatmeal Banana Pancakes 

    Rolled Oats: Oatmeal in pancakes makes them so much heartier than traditional flour pancakes. Taste, texture, and pure satisfaction. 

    Bananas: We’re making banana pancakes and pretending it’s the weekend now! Ok I’m done with the Jack Johnson references (but if someone knows him…tell him about my pancakes please). Two bananas in any stage of ripeness will work for this recipe.

    Wet Ingredients: Almond milk (or any milk you prefer), vanilla for flavor and an egg to hold it all together.

    Dry Ingredients: Baking powder, salt, and cinnamon! Cinnamon adds a ton of flavor in just the ½ teaspoon we’re adding, don’t skip it!

    Most of these ingredients are staple pantry items, making this recipe so easy to whip up whenever you want! I love having this recipe in my back pocket when a friend or family comes to visit. Making a homemade breakfast that impresses but is secretly so simple is always a winner in my book!

    How to Make Easy Oatmeal Banana Pancakes 

    Combine and Blend: This recipe is so simple. All you have to do is combine all the ingredients in your blender and voila you have your pancake batter.

    Cook & Enjoy: Preheat your skillet and spray with cooking oil or butter. Add ¼ cup of the batter to the skillet, cook on one side until edges start to bubble. Flip with your spatula and cook on the other side for another ~2 minutes. 

    That’s it! So simple right?

    Ingredients:

    • 1 cup, plain almond milk
    • 2 large bananas
    • 1 egg
    • 1 tsp, vanilla extract
    • 2 cups, rolled oats
    • 1 tbsp, baking powder
    • ¼ tsp, salt
    • ½ tsp, ground cinnamon 
    • Optional toppings: bananas, maple syrup, almond butter, peanut butter, cinnamon

    Directions:

    1. Combine all the ingredients into a blender and blend until smooth and creamy.
    2. Heat a large skillet over medium heat and spray with cooking oil or drizzle with oil/butter of choice
    3. Scoop approx. ¼ cup of batter on the skillet and cook pancakes until edges start to bubble.
    4. Flip pancake to the other side using a spatula and cook for approx. another 2 minutes 
    5. Repeat until all batter is used
    6. Serve and enjoy with your desired toppings!
    Notes:
    1. To make vegan, sub the egg for a flax egg (1 tbsp flaxseed meal & 3 tbsp of water)
    2. These pancakes make the perfect leftovers. Store them in an airtight container in the fridge for up to 4-5 days. Just pop them in the microwave for a few seconds to reheat.
