Easy Homemade Strawberry Pop Tarts

    When you’re craving a pop tart but don’t want all the added preservatives and extra ingredients you can make my easy homemade version using pre-made pie crust, homemade strawberry chia jam, and a light powdered sugar icing!


    Who else CRAVES pop tarts? I never buy them though… Instead I make these easy homemade strawberry pop tarts when that craving strikes because it's loaded with fresh strawberry chia jam that, in my opinion, is WAY better than store bought jams!

    We’re calling this an ‘easy’ recipe because instead of making our own pie crusts, we’re using pre-made frozen pie crusts. It cuts down on a lot of steps, and as long as you’re looking at the ingredients list and buying a pre-made crust with minimal and prouncable ingredients then why wouldn’t we make our own?! I used the pre-made frozen pie crusts from Trader Joe’s, the ingredients list is minimal so they are a great option!

    I’m confident once you make this recipe you’ll never buy store bought pop tarts again!

    What Ingredients are Needed for Easy Homemade Strawberry Pop Tarts?

    Pie Crusts: This recipe is called “easy pop tarts” for a reason…we’re using frozen premade pie crusts you can find in the freezer section of the grocery store. Gluten free pie crusts can be swapped if needed.

    Strawberries: Fresh strawberries for our easy strawberry chia jam filling.

    Chia Seeds: A little bit of chia seeds combined with fresh strawberries and water on the stove makes for a super simple and super fresh strawberry jam.

    Egg: To seal the poptarts together and to brush over the tops of the pop tarts to make them a nice golden brown color.

    Powdered Sugar: For the icing on top.

    Almond Milk: For making the icing. Can sub for regular milk. 

    Sprinkles: To decorate the poptarts with.

    How to Make Easy Homemade Strawberry Pop Tarts

    Make the Strawberry Chia Jam: On the stove over medium heat and the halved strawberries with ½ cup of water. When strawberries begin to soften, lightly smash them with a spatula or a wooden spoon. After they begin to reduce more, add the chia seeds and turn the heat down to medium low. Stirring occasionally. Remove from heat when chia seeds expand, absorb all the water, and the jam thickens. Entire step should take approximately 10-12 minutes.

    Prep for the Pop Tarts: Preheat the oven to 400° F and line a baking sheet with parchment paper. In a small bowl, beat the egg with a fork and set aside.

    Prep the Dough: Lightly flour a flat surface and roll the thawed pie crusts out. Trim the edges so each crust is a rectangle. Then cut each pie crust into 16 equal rectangles. Brush the edges of the rectangles with the egg wash.

    Assemble the Pop Tarts: Place a heaping spoonful of the strawberry chia jam in the center of 8 of the rectangles. Take the remaining 8 rectangles and lay them over the filled rectangles. Using a fork, press the edges of the rectangles together to seal the pop tart. Brush each pop tart with remaining egg wash and poke with a fork 3-4 times to allow for ventilation when baking. 

    Bake the Pop Tarts: Bake in the oven for 18-20 minutes until the crust is golden brown. Remove from the oven and allow them to cool to room temperature before frosting/decorating.

    Make the Icing: While the pop tarts are cooling, make the icing by mixing the powdered sugar and milk together. 

    Finishing Touches: Spread the icing over the cooled pop tarts and top with the sprinkles. Enjoy!

    Ingredients:

    • 2 frozen pie crusts, thawed
    • 1 cup, strawberries, stems removed and halved (166g)
    • 2 tbsp, chia seeds (24g)
    • 1 egg, beaten
    • ½ cup, powdered sugar (60g)
    • 2 tsp, almond milk (15ml)
    • Red and pink sprinkles, for decorating 

    Directions:

    10. Make the icing by mixing the powdered sugar and milk together. Spread the icing over the cooled pop tarts and top with the sprinkles. 
    Notes:
    1. Can substitute for gluten-free pie crusts if needed.
    2. Store in an airtight container in the fridge for up to a week.
    3. To reheat, place in the microwave for 30 second intervals until desired temperature is reached. 
    4. Pie crusts may crack when removed from their packaging. If that happens, just roll the dough into a ball and then use a rolling pin to roll out into a rectangle.

    THESE ARE SO GOOD! Love that there's no added sugar or weird thickeners in the homemade jam too!
