Easy Freezer Shrimp Fried Rice

    We’re taking all the freezer-friendly ingredients and cooking up a delicious and healthy take on shrimp fried rice. Budget and taste-bud approved.


    Half of the ingredients in this recipe are staple freezer items. All you need for this easy shrimp fried rice recipe are a few simple ingredients that you probably already have on hand!

    This is one of my go-to meals to make for a few reasons:

    1. It’s full of pantry and freezer staples that I always have on hand!
    2. Ingredients are somewhat cheap (depending on where you get your shrimp!)
    3. Makes enough for four portions!
    4. Super easy to make, less than 15 minutes!
    5. Only one pan is required!

    What Ingredients are Needed for Easy Freezer Shrimp Fried Rice?

    Frozen Peas, Corn & Carrots: Saving ourselves tons of prep time but using a frozen vegetable medley of corn, peas, and carrots. No chopping required for this dish!

    Frozen Shrimp: Frozen pre-cooked shrimp is the easy way to go. I buy the medium-sized cooked, deveined, peeled, and tail off shrimp from Trader Joe’s. For the easiest route, opt for something similar from your local grocery store.

    Frozen Brown Rice: When I’m feeling extra lazy, or just want some pre-made grains on hand, I buy the frozen brown rice packets from Trader Joe’s. These work great for this recipe because all you have to do is heat them in the microwave for a minute before adding them to the skillet with the rest of the ingredients. You can also use leftover rice from a previous meal or cook up some from your pantry. Just note that cook times will vary based on your choice.

    Eggs: Lightly beaten and scrambled up with the rest of the ingredients. 

    Coconut Aminos: I opt for coconut aminos rather than soy sauce because it's less salty and a little bit sweeter. This is a personal preference and you can 100% swap for regular or even low-sodium soy sauce if that’s what you prefer. If you’re trying to reduce your sodium intake then I would definitely stick with the coconut aminos! 

    Spices: A bit of ginger and garlic powder.

    How to Make Easy Freezer Shrimp Fried Rice

    Step One: Make sure your shrimp are thawed before cooking. For a quick thaw, submerge them in a bowl of hot water for 5 minutes.

    Step Two: In a large skillet, heat olive oil over medium-high heat and add the frozen vegetables. Cook until the veggies soften, about 2-3 minutes. Add the garlic and ginger and stir to coat the veggies. Cook for another minute.

    Step Three: Push vegetables to one side of the skillet, add the beaten eggs to the other side, season with salt and pepper, and scramble the eggs until cooked.

    Step Four: Add the cooked brown rice, thawed shrimp, and coconut aminos to the skillet. Fold all ingredients together. Lower heat to medium and cook with the lid on until shrimp is warmed through, approx. 3 minutes.

    Step Five: Top with optional scallions and serve!

    Easy Freezer Shrimp Fried Rice

    Ingredients:

    • 16oz, medium frozen pre-cooked shrimp, peeled, deveined, and tail off
    • 1 tbsp, olive oil (13g)
    • 1 ½ cups, frozen peas, corn and carrot medley (255g)
    • 1 tsp, ginger powder
    • 2 tsp, garlic powder
    • ¼ cup, coconut aminos or low sodium soy sauce (60ml)
    • 4 cups, cooked brown rice 
    • 3 large eggs, lightly beaten 
    • Salt and pepper, to taste
    • Scallions, optional topping

    Directions:

    1. Thaw your pre-cooked frozen shrimp in a bowl of hot water for 5 minutes.
    2. In a large skillet, heat olive oil over medium-high heat and add the frozen vegetables. Cook until the veggies soften, about 2-3 minutes.
    3. Add the garlic and ginger and stir to coat the veggies. Cook for another minute.
    4. Push vegetables to one side of the skillet, add the beaten eggs to the other side, season with salt and pepper, and scramble the eggs until cooked.
    5. Add the cooked brown rice, thawed shrimp, and coconut aminos to the skillet. Fold all ingredients together. 
    6. Lower heat to medium and cook with the lid on until shrimp is warmed through, approx. 3 minutes.
    7. Top with optional scallions and serve immediately. 
    Notes:
    1. Store leftovers in an airtight container in the fridge for up to 4 days.
