Easy Classic Chicken Caesar Salad Recipe

    This classic chicken caesar salad recipe is so easy it takes only 15 minutes to make from start to finish and requires a handful of simple ingredients, making this the perfect lunch to whip up any day of the week!


    There’s a stigma around Caesar Salad that it might not be the healthiest salad for you. 

    So, is Caesar Salad Healthy?

    Let’s break down the components of the salad. It’s a romaine lettuce base (so you’ve got your veggie right there). Then it’s topped with sauteed or grilled chicken (so there we have our protein source). And then it's topped with parmesan cheese and Caesar (our fat sources). And then the croutons are our source of carbs. To me this sounds like a well-balanced meal!

    What Ingredients are Needed for Chicken Caesar Salad?

    Chicken: Boneless, skinless chicken tenders are the easiest chicken to work with. They are already cut into small pieces making them quick to cook on the stove! To make this recipe even easier, you can also use a pre-cooked rotisserie chicken.

    Romaine Lettuce: Four cups of romaine lettuce chopped up into nice bite-sized pieces.

    Croutons: You can use store-bought croutons, make your own, or to make things really interesting use baked cheese bites like these from Trader Joe's!

    Caesar Dressing: Ok so don’t get mad at me, but… we’re using a store-bought caesar dressing. I know it’s not very original of me, but TBH I don’t really make a ton of my own dressings, especially when there are so many healthy salad dressing options out there. This recipe is all about saving time. Here are a few of my favorite healthier caesar salad dressings you can buy at the store: Primal Kitchen or Fody Foods from Amazon.

    Parmesan Cheese: It’s not Caesar salad without loads of delicious fresh parmesan cheese. Please please please, whatever you do, get fresh parm! The powdered kind you buy in the cylindrical shaped bottle in the pasta aisle…yah not that one please!

    How to Make Chicken Caesar Salad

    This recipe was designed for ease and simplicity!

    Start by cooking your chicken. Heat olive oil in a large skillet to medium heat. Add the chicken tenders, sprinkle with salt, pepper, and parsley. Cook until white all the way through. Then remove from the stove and chop into bite-sized pieces.

    Assemble the salad. Chop the romaine and add to a large bowl. Add the parmesan cheese, cooked chicken, and croutons. Toss together. Drizzle with desired amount of caesar dressing. I used about ¼ to ⅓ cup. 

    Serve immediately and enjoy!

    Ingredients:

    • 1lb, boneless skinless chicken tenders
    • ½ tbsp, olive oil
    • 1 tsp, dried parsley 
    • 4 cups, romaine lettuce
    • 1 cup, shredded parmesan cheese
    • ½ cup, croutons 
    • Salt and pepper, to taste
    • ⅓ cup, caesar dressing

    Directions:

    1. Heat olive oil in a large skillet to medium heat. Add the chicken tenders, sprinkle with salt, pepper, and parsley. Cook until white all the way through. Then remove from the stove and chop into bite-sized pieces.
    2. Chop romaine and add to a large bowl. Add the parmesan cheese, cooked chicken, and croutons. Toss together. 
    3. Drizzle with desired amount of caesar dressing. 
    4. Serve immediately and enjoy!
    Notes:
    1. Don’t dress the salad until ready to consume as the lettuce will wilt and croutons will get soggy if dressed too far in advance.
    2. You can 100% make your own caesar dressing but this recipe is intended to be simple and easy so that’s why I simply use a healthier store-bought option.
