    This colorful and vibrant salad is packed with fresh vegetables with a ton of nutritional value. We’re using a base of mixed greens and purple cabbage and topping it off with shredded carrots, sliced bell peppers, and shelled edamame. Each bite is crunchy and delicious. And for even more added crunch we’re topping it with peanuts and chow mein noodles, all paired with a homemade sesame peanut dressing makes this dish simply irresistible. 

    A Homemade Sesame Peanut Dressing. What makes this salad so great is the homemade sesame peanut dressing! It’s so easy to whip up with just a handful of ingredients, a mason jar, and a fork. We’re combining creamy peanut butter, with sesame oil, hot sauce, soy sauce, and lime juice for the most savory and delicious peanut-y Asian dressing. So much better than store bought!

    Tons of Veggies: This salad is bursting with fresh vegetables. It’s loaded with practically every color of the rainbow, making it super healthy and adding in a ton of nutritional value. A combination of mixed greens, purple cabbage, shredded carrots, red and orange bell peppers, and edamame bring this salad to life. 

    Toppings: As if this salad isn’t crunchy enough, we’re topping it with peanuts and crunchy chow mein noodles. If you’re a big crunch factor person, you’re going to love this salad.

    Chicken: Our protein source for this dish is some lightly seasoned and sauted chicken breast. Chopped into bite-sized cubes before cooking to make this dish come together in only 20 minutes!

    Homemade Sesame Peanut Dressing: Home salad dressing is the way to go. This sesame peanut dressing is creamy and a little bit spicy. Creamy peanut butter, soy sauce, sesame oil, sriracha, and lime juice come together for the perfect flavor pairing.

    How to Make this Crunchy Asian Salad with Sesame Peanut Dressing

    Step One: Cut the raw chicken into bite-sized cube pieces. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cubed chicken breast and saute until cooked through, approx. 10 minutes.

    Step Two: While the chicken is cooking, chop your cabbage into small pieces and slice the bell peppers lengthwise and then in half. 

    Step Three: Prepare the sesame peanut dressing by combining 1 ½ tablespoons of sesame oil, ⅓ cup of creamy unsalted peanut butter, 3 tablespoons of soy sauce, 1 tablespoon of sriracha hot sauce, 2 tablespoons of lime juice, and 1 tablespoon of sesame seeds. Add all the ingredients to a mason jar or a bowl and whisk together with a fork. (I like doing it in a mason jar so I can easily store the leftovers in the fridge.)

    Step Four: To each bowl or tupperware container add 1.5 cups cups of mixed greens, ½ cup of cabbage, ¼ cup carrots, ¼ of the bell peppers, ¼ cup of edamame, ¼ of the cooked chicken, ¼ cup of chow mein noodles, and ⅛ cup of peanuts. 

    Step Five: Drizzle with desired amount of sesame peanut dressing. (If meal prepping or not serving immediately, don’t dress the salad until just before consumption).

    Ingredients:

    • 1 tbsp, olive oil
    • 16 oz, boneless skinless chicken breast, cubed 
    • 2 cups, purple cabbage, chopped small
    • 2 cups, shredded carrots
    • 2 bell peppers, sliced
    • 6 cups, mixed greens
    • 1 cup, frozen shelled edamame, thawed 
    • 1 cup, chow mein crunchy noodles
    • ½ cup, peanuts 
    • Dash of salt and pepper, to taste

     

    For the Sesame Peanut Dressing:

    • 1 ½ tbsp, sesame oil
    • ⅓ cup, creamy unsalted peanut butter
    • 3 tbsp, soy sauce
    • 1 tbsp, sriracha hot sauce 
    • 2 tbsp, lime juice
    • 1 tbsp, white sesame seeds
    • Splash of water

    Directions:

    1. Heat olive oil in a large skillet over medium-high heat. Add the cubed chicken breast and saute until cooked through, approx. 10 minutes.
    2. While the chicken is cooking, chop your cabbage and slice the bell peppers.
    3. Prepare the sesame peanut dressing by combining all the ingredients into a jar and whisk together with a fork.
    4. To each bowl or tupperware container add 1.5 cups cups of mixed greens, ½ cup of cabbage, ¼ cup carrots, ¼ of the bell peppers, ¼ cup of edamame, ¼ of the cooked chicken, ¼ cup of chow mein noodles, and ⅛ cup of peanuts. 
    5. Drizzle with the sesame peanut dressing. (If meal prepping or not serving immediately, don’t dress the salad until just before consumption).
    Notes:
    1. Slice the peppers and then cut in half once
    2. Buy pre-shredded carrots if you can to save time!
    3. Store leftovers in the fridge for up to 5 days. Keep dressing separate from the rest of the salad.
    4. To make gluten-free, just remove the chow mein noodles
