A delicious Mediterranean salad full of a medley of delicious marinated beans, arugula, and sundried tomatoes. A dupe of the Crete Salad from GRECO.
If you’ve never been to a GRECO before it’s most likely because you don’t live in Massachusetts. And that’s why I’m here to share with you this dupe recipe of GRECO’s Crete Salad!
GRECO is a fast casual Mediterranean restaurant with several locations in the Boston, MA area. They’re widely known for their delicious Greek pitas stuffed with lamb, chicken or falafel and topped with french fries!
This Crete Salad, however, is one of my go-to orders from GRECO. It’s hearty and filling and vegetarian-friendly!
What Ingredients are Needed for Crete Salad?
Beans: A trio of black beans, pinto beans, and garbanzo beans.
Arugula: Chopped up nicely to accompany the beans, the real star of the show.
Sun Dried Tomatoes: Packs in a ton of delicious flavor in this salad.
Pita Chips: I like to eat this with pita chips on the side or crumbled up on top like a crouton!
Red Wine Vinegar: For the dressing.
Feta Cheese: This isn’t on the GRECO salad but I felt like it absolutely needed cheese!
Lemon: To add to the dressing.
Olive Oil: We’re making a red wine vinaigrette so we absolutely need olive oil for hte dressing!
Salt and Pepper: For seasoning the dressing.

How to Make Crete Salad
Step One: In a large bowl, add all the rinsed beans, chopped arugula, chopped sun dried tomatoes, and feta cheese. Toss ingredients together until mixed together.
Step Two: In a separate small bowl, add the red wine vinegar, olive oil, lemon juice, salt, and pepper. Whisk together with a fork.
Step Three: Pour the dressing over the bean mixture and toss to combine.
Step Four: Let sit in the fridge for 1 hour until the beans are marinated. This can be an optional step. You don’t have to wait for it to marinate, but it will taste best if it does!
Step Five: Top with optional crumbled pita chips or use whole pita chips to scoop up and eat the salad.
