A bite-sized protein snack, perfect for when you’re on-the-go or used as a topping on your favorite treats! These protein bites are gluten-free, dairy-free, and vegan and are the perfect poppable snack!
Who else crumbles up their protein bars and uses them as toppings? Whether you throw them on yogurt bowls, overnight oats, protein fluff, or ice cream - these cookies and cream protein bites will be your new favorite topping!

What Ingredients are Needed for Cookies & Cream Protein Bites
Oat Flour: To make this recipe gluten-free we’re using certified gluten-free oat flour. I bought mine from Thrive Market.
Vanilla Protein Powder: For this recipe I use a plant-based protein powder from Pure Food Company. I find that protein powders made with pea protein have an almost chalkier consistency that work so well when making homemade protein bars. This specific protein powder uses a combination of pea protein, hemp protein, and brown rice protein. Since protein powders are expensive, feel free to use whichever vanilla protein powder you already have on hand!
Cashew Butter: This nut butter is used as our binder to hold everything together. Since we want the oreo/cookies and cream flavors to come through, using cashew butter offers that same binding quality as peanut or almond butter without all the overpowering flavor!
Agave Syrup: For a natural sweetener! Can sub for honey.
Vanilla: To enhance the flavors.
Coconut Oil: Refined coconut oil, melted in the microwave for 10-15 seconds.
Oreos: In the spirit of keeping this gluten-free, opt for gluten-free Oreos. If gluten-free is not for you, use regular oreos, Trader Joe’s Joe Joes, or any brand of chocolate cookie sandwiches.
Chocolate Chips: Mini semi-sweet chocolate chips from Enjoy Life are my mini chips of choice as they are free from dairy, gluten, egg, soy, and nuts and they are made in a nut-free and gluten-free facility. If you have allergies, definitely check out this brand!

How to Make Cookies & Cream Protein Bites
These protein bites are a no bake recipe, so making them is quick and easy.
Mix the oat flour, protein powder, and salt in a large bowl.
Add the cashew butter, agave syrup, vanilla, and melted coconut oil and stir with a spatula until fully combined.
Crush the oreos and fold them into the mixture along with the mini chocolate chips.
Press dough into a parchment-lined 8x8 baking pan and place in the fridge to chill for at least one hour.
Once chilled, remove from the fridge, lift the edges of the parchment paper to remove the protein bar brick and cut into ½ inch bite-sized pieces (or approx. 90 pieces).
Store cut protein bites in the fridge until ready to enjoy!
