A no-bake, gluten-free and vegan energy ball loaded with coconut and peanut butter for the perfect on-the-go treat!
Who else loves on-the-go snacks!? They’re perfect whether you are actually always on the move or just too lazy to make a snack. Prepping these coconut energy balls to have on hand during the week is a huge life saver when the hunger cravings strike and you want something sweet but also nutritious.
These energy balls are gluten free, made with a base of coconut flour and shredded coconut. They are also refined-sugar free and vegan! Maple syrup and medjool dates provide the sweetness factor without using granulated sugars. Peanut butter binds the balls together and makes these balls a super easy no-bake vegan recipe.
So, what’s the hype with energy balls? Are they actually beneficial? The answer is yes! Energy balls are full of nutrients, healthy carbs, fats, and fiber, perfect for a well-balanced diet.

What Ingredients are Needed for Coconut Energy Balls?
Shredded Coconut: Desiccated unsweetened shredded coconut.
Dates: Pitted medjool dates.
Peanut Butter: Creamy natural peanut butter.
Coconut Flour: Is the base of our energy ball. And YES, you can eat coconut flour raw, without heat treating it.
Maple Syrup: To naturally sweeten the coconut balls without the use of refined sugars.
Vanilla Extract: To enhance the flavors.

How to Make Coconut Energy Balls
Step One: In a food processor or blender, add the pitted dates, creamy peanut butter, maple syrup, and vanilla. Pulse until dates have broken down and a paste like texture is achieved.
Step Two: Transfer to a mixing bowl and add the shredded coconut and coconut flour and mix with a spatula until a dough starts to form.
Step Three: Spoon a tablespoon sized amount into your hands and roll into a ball.
Step Four: Place balls on a parchment lined baking tray and place in the fridge to chill for at least one hour.
Step Five: Keep in an airtight container in the fridge until ready to eat.
