Refried beans, black beans, sharp cheddar cheese, and cream cheese rolled in a soft corn tortilla and air fried into a crunchy and delicious taquito!
Taquitos are one of my favorite Mexican foods! I love the crispy crunch of the tortillas on the outside and the gooey creaminess of the cheese on the inside - they’re such a satisfying snack!
My mom used to buy us the chicken and cheese taquitos at Sam’s Club when we were kids. Talk about the ultimate after school snack!
This recipe is a vegetarian spin on the classic El Monterey Chicken and Cheese taquitos I grew up eating.

What Ingredients are Needed for Bean and Cheese Air Fryer Taquitos?
Corn Tortillas: Six inch corn tortillas are the perfect size for taquitos.
Refried Beans: Fat-free refried beans.
Black Beans: Black or even pinto beans!
Cream Cheese: Light cream cheese.
Sharp Cheddar Cheese: A sharp white cheddar cheese.
Taco Seasoning: Opt for a low sodium premade taco seasoning packet or make your own with chili powder, cumin, coriander, and garlic powder.

How to Make Bean and Cheese Air Fryer Taquitos
Step One: Heat the refried beans and cream cheese on the stove until smooth and creamy. Add in the taco seasoning and stir well to combine.
Step Two: Soften the tortillas in the microwave for 30 seconds by placing them on a plate and covering them in a damp paper towel.
Step Three: Top tortillas with refried bean mixture, black beans, and shredded cheese. Roll and place seam side down in a pre-greased air fryer. Lightly spray the tops of the tortillas with olive oil.
Step Four: Fry for 6-7 minutes at 400° F.
Step Five: Serve with optional garnishes and enjoy!
