Three layers, three ingredients, one delicious and comforting Mexican dip recipe to make for your next gathering!
If you’ve been following my blog since it started, then you may know of my boyfriend who made this blog for me and helps with all the technical behind the scenes work. Shout out to Mike! Well, now he’s contributing to the recipes too! This baked three layer Mexican dip is his creation!
I always grew up making a cold seven layer Mexican dip consisting of refried beans, guacamole, salsa, lettuce, cheese, green onions, and taco seasoned sour cream. My mom would make it all the time, I brought the recipe with me to college, and my college roommate continues to make it to this day. So when I was brainstorming recipes to make for Cinco de Mayo this year, naturally my seven layer dip was on the list…
…But then Mike told me about his warm three layer dip and I had to give it a try!
Only three ingredients and 15 minutes and you can have this ooey gooey and comforting Mexican dip for your Cinco de Mayo party, game day party, or really any gathering with a bunch of people!
What Ingredients are Needed for Baked Three Layer Mexican Dip?
Cream Cheese: Light or regular.
Pepper Jack Cheese: Buy the block of cheese and grate it yourself, I promise it makes a world of difference compared to the pre-shredded store bought cheeses.
Chili: Opt for beanless chili for the best results. I used the Hormel brand. If you want to make this vegetarian, Gardein brand has a vegetarian plant-based beanless chili that will work great as a swap.
Kitchen Tools Needed for this Recipe
- Round 9 inch pie pan or small oven-safe skillet
- Cheese grater
- Spatula

How to Make Baked Three Layer Mexican Dip
Step One: Preheat the oven to 350° F.
Step Two: Layer cream cheese across the bottom of a small cast iron skillet or 9” round baking pan. Spread chili on top of the cream cheese. Sprinkle shredded cheese on top of the chili.
Step Three: Bake in the oven for 15 minutes until the cheese has fully melted.
Step Four: Remove from the oven and serve with your favorite tortilla chips!
